My whole life, I have never been much of a salad person. How/why are all these people so into munching on a bowl of leaves. IJDGI?!?!?!
Then I met my boyfriend, who eats salad like it’s his effing job. He was determined to turn me on to salads, I was iffy. Why would I order a measly salad when I could get a yummy & filling (gluten free) sandwich? Unclear.
I try to put a conscious effort into trying new things & being less stubborn (I’m 100% Leo), soooo while at Trader Joe’s a while back, I oddly/semi-blindly threw a Pasadena Salad in my cart. At my old job, the girls would eat them on the reg, & although I gagged a bit when I saw them chowing down- I figured it was a good starting point. What was the worst that could happen?
a. I am over it & my herbivore of a boyfriend thinks I got him a sweet present.
or
b. I love it & we can finally split salads at dinner.
Either way, I win.
Moral of the story– It was the latter. That was the day I realized that I (GASP) LOVE salad!! Can you believe it? Nope, me neither. Salads are now a staple in my diet & whenever I go out to eat, It’s usually what I order. Talk about a 360.
Best part of this whole transformation?? You don’t have to cook salads, meaning they are actually something I can make (not a fan of cooking). The BF is also quite pleased w/ all of this, cause not only am I eating his fave food, but also making it. He is no longer the only “cook” in the kitchen.
I put those salad crafting skills to use this week using some amazing looking Jalapeños straight from my garden. The result? A spicy summer salad that is refreshing, filling, & has an epic kick to it. Easily the best salad I ( & Zack ) have ever tried.
I highly reccomend you walk run to the store & grab the ingreds for tonights dinner. You will be obsessed- swear.

Salad Ingredients::
+ Organic Greens
+ Watermelon (cubed)
+ Cotija Cheese
+ Purple onions (cubed)
+ Avocado (cubed)
+ Mint
Dressing Ingreds::
+ Olive Oil (Jalapeño Olive Oil, a plus).
+ Sliced Jalapeños
+ Lemon juice
Assemble::
1. Mix together your salad mix, watermelon, Cotija cheese, purple onions, & avocado into a large bowl.
2. In a small bowl, mix together your olive oil, lemon juice, and sliced jalapeños. Let “saturate” for a few.
3. Drizzle the sauce over your salad & throw in the Jalapeños with it.
4. Garnish w/ a sprig of mint (also from my garden).
5. Serve on a pretty plate & dig in.
