Sunday Brunch | Peach Chia Parfait

When the last day of the week rolls around, I go big.

I don’t touch the computer (digital sabbatical day), happily stay in my pajamas for way too late in the day, read/relax/take a bath/do whatever I please,  & of course… there is always a brunch situation involved.

If I’m feeling super domesticated, which is RARE, I will sometimes take brunch into my own hands. This always works out especially well if it’s one of those don’t leave-the-house-Netflix-marathon kinda day (aka one of my favorite types of days ever!).

If that’s the intended Sunday schedule, I will plan ahead of time & prepare up my go-to chia parfaits the night before. I am no cook, not even close, so this is my default & it always looks so fancy that Zack thinks I’m some sorta Julia Child in the kitchen (& then tells me I should start cooking dinner instead of him… *crickets*).

We both love it, it’s uber healthy, jam packed w/ protein & fiber (yah Chia seeds!), & I get major brownie points for being suchhhh a good “cook”. Just serve with mimosas & you’re good to go!

Peach Chia Parfait

» 1 cup coconut milk (or better yet, make your own almond milk!)
» 1 cup water
» 1 cup frozen peaches
» 4 tablespoons chia seeds
» 1 teaspoon cinnamon + a dash for garnish
» Coconut Chips for garnish
» Mint for garnish


1. Make your peach puree by blending together your frozen peaches with one cup of water & cinnamon.

2. In a separate container, mix together your chia seeds & coconut milk.

3. Let both sit overnight in the fridge so the chia seeds can absorb the milk and expand into a pudding like texture (similar to Tapioca!)

4. When ready to eat, pour your peach puree into a cup & then spoon in your Chia pudding. Top off with some coconut chips for added crunch, a dash of cinnamon, & a sprig of mint!
