Lookbook Cookbook has been one of my favorite blogs since it entered the world wide web, & after doing an interview with Jessica Milan (the blogger/chef) wayyyy back in 2012, we became “e-friends” & stayed in touch over the years.

Jessica hit me up not to long ago letting me know she was coming out with a book, & I pre-ordered it on Amazon that second, three months before it was even coming out.

When her book came in the mail, I sat down & went through the whole thing with little post-it notes marking every recipe I wanted to make (so basically, every page). I even saw my girl Lauryn on one of the glossy pages of the book, taking a bite out of what looks like some really bomb rainbow slaw.

Anyways, Lookbook Cookbook is full of delicious gluten-free/simple/vegan recipes + a whole lot of really epic fashion-inspo. You can order it on Amazon or pick one up in your local Urban Outfitters.

Check out my first recipe creation from the book, Cashew Cookie Dough that will literally blow your mind. Between Zack, my Mom, & my sister… this recipe is being requested atleast once a week.

It’s delish, MUCH better for you than that e coli filled Tollhouse crap, & fool proof for the cooking challenged such as myself (I am the queen of burning everything).

Lookbook Cookbook | Cashew Cookie Dough

gluten free | vegan | no bake

» 1 cup raw unsalted cashews

» 1/4 cup pure maple syrup

» 1/4 cup extra-virgin coconut oil, melted/softened

» 1 tsp natural vanilla/almond extract (exact recipe calls for vanilla, but I replaced it w/ my fave almond extract!)

» 1/2 tsp cinnamon

» 1/3 cup organic dark chocolate chips


1. Blend cashews to a coarse powder in a food processor.

2. Add in maple syrup, coconut oil, vanilla (or almond) extract, & cinnamon. Blend again till it’s a dough like texture.

3. Add the chocolate chips & pulse a few quick times to just mix them in (not actually blend).

4. Store in a small bowl & let harden in the freezer for appx. 2 hours. Store in the freezer & 2hen ready to eat, defrost for a bit & serve… or spoon directly into your mouth.

  1. Stop it, this looks amazing!! Too bad I’m allergic to cashews. :( I’m sure I could substitute it for hazelnuts or peanuts. Mmm, sounds so good! Thank you for sharing!
