Today my tax guy was LOL-ing so hard cause I cruised in with my iPhone connected to it’s portable charging device w/ my huge lips cover & I didn’t put it down phone the entire 4 hours (bored to tears = understatement of the century). Can you blame me though? Going through my Instagram feed is basically a full time job.
I typically like to start at the bottom, & work my way up so that I don’t miss anything. I screenshot every single outfit that inspires me, piece of clothing I want to buy, & recipe I want to make. Lately though, my feed has been A LOT less fashion & A LOT more food. I have become slightly obsessed w/ following all the Aussie babes- those girls know how to eat pretty.
If my Instagram feed were a magazine, it’d be Hustler… yet w/ food. I am talking some MAJ food porn. Which is exactly where I found this gem of a recipe– overnight oats a.k.a. a chia parfait a.k.a. a rager in your mouth a.k.a. what I have had for breakfast the last 10 days.
Trust me, your tastebuds are going to DIE!!!!! xx, E
P.S. Be sure to follow me on Instagram to see the latest & greatest on my feed ;).
Chia Mixture Ingreds::
+ Gluten Free oats (or a packet of oatmeal!).
+ 1 Meyers lemon
+ 2 cups of coconut milk.
+ 4 tablespoons chia seeds.
++ Optional: add in some Perfect Fit protein, my personal fave!! ++
++ Direction: mix together the above ingredients the night before, & let sit in the fridge so your chia seeds can expand. ++
DIY Rasberry Jam Ingreds::
+ a handful of organic raspberries.
+ a squeeze of lemon.
+ a squeeze of Manuka or local honey.
++ Direction: Mash it all together!! ++
++ Layering time!! First add some of your chia mixture, then your yummy raspberry jam, some sliced bananas, more chia mixture, & more raspberry jam. Top it off with some sliced almonds & bee pollen (or maybe a scoop of sun butter & some shredded coconut- get creative!). ++
++ drooling yet??? I am- GTG grab my jar from the fridge now. See ya! ++
WOW! Looks so good! I definitely need to try it!

it’s the jam!!
Ok, first gluten free oatmeal? Where can I find that? Second I literally want to grab a spoon and eat this through my computer screen! For some odd reason the banana in the middle sold me on this…lol. I love bananas obviously.
XOXO,

bananas are the best!! You can find G-Free oatmeal at any of your local healthy grocery stores (i.e. Whole Foods/ Trader Joes)
I LOVE Perfect Fit Protein. And all things Tone It Up. This recipe looks gorgeous and yummy. Winning combo.
