There is this common misconception out there that eating healthy means you have to be a good cook with a lot of free time.
This post is solid proof that is 100% not the case. Not only am I lacking major skills in the kitchen, but I am honestly way too busy w/ other things to be messing around with measuring cups, precise recipes, preheating the oven, etc. (#aintnobodygottimeforthat).
Forever 21 is all about health & fitness for January 2015, so we joined forces to share with you guys my top 5 fave super easy and healthy snacks that literally take 5 minutes (or less) to whip up.

SKINNY FRUIT DIP
» natural peanut butter
» honey greek yogurt
» shredded coconut
» fruit
Blend together peanut butter with honey flavored Greek yogurt. Sprinkle with any garnish of your liking, I did coconut shreds but you can also do dark chocolate shreds (yum!), honey, cinnamon, Chia seeds, etc. Serve with fruit.
GRAPE & CHIA POPPERS
» frozen grapes
» greek yogurt
» chia seeds
Put a toothpick in your grape & freeze for 12-24 hours. Once frozen, dip your grape pop in Greek yogurt & then into the Chia seeds. Place back in the freezer & enjoy this healthy take on the cake pop!
FANCY 5 MINUTE TOAST
» gluten free toast
» avocado
» goat cheese
» hemp hearts
» pomegranate seeds
» Meyers lemon
Toast your bread. Toss together the avocado, goat cheese & pomegranate seeds. Pile the yummy mixture on your toast & top it off with a squeeze of lemon & a sprinkle of hemp hearts (a great superfood!).
BLUEBERRY PROTEIN BITES
» organic blueberries
» slivered almonds
» coconut chips
» greek yogurt
Mix together blueberries, almonds, & greek yogurt in a large bowl. Scoop spoonfuls of your mixture into a silicon ice cube tray. Sprinkle each cube with shredded coconut. Freeze for 8 hours & enjoy!
ROASTED SEA SALT EDAMAME
» shelled edamame
» 2 tablespoons olive oil
» sea salt
Preheat the oven to 450 degrees. Mix together the Edamame, olive oil (I used Jalapeno infused for some spice), & sea salt. Bake for 15 minutes or until golden brown & crispy.
